1: PREPARE COCONUT SIMPLE SYRUP Bring 1 cup water and 1 cup sugar to a boil to dissolve. Remove from heat and add 1 cup coconut milk. Cool to room temperature. Strain and refrigerate.
2: COMBINE AND MUDDLE INGREDIENTS Once cooled, combine 1/2 ounce Coconut Simple Syrup, 3/4 ounce Fresh Lime Juice, 8–12 Fresh Mint Leaves and muddle together. Together, these ingredients create your cocktail base.
3: ADD REMAINING INGREDIENTS Add the rum and fill the glass with ice. Top with club soda and stir gently.
4: GARNISH Garnish with a big mint sprig. Enjoy!
